Pomegranate seems to be a fruit that is trending right now. Despite being a great source of antioxidants they also give a delightful burst of flavour and texture. So what better way to include this so-called superfood than in an aptly coloured Christmas salad for the Chrismas day lunch! Its very simple, here's how to make it:
1 (10 ounce) bag baby spinach leaves, rinsed and drained
1/4 red onion, sliced very thin
1/2 cup walnut pieces
1/2 cup crumbled feta
1/4 cup alfalfa sprouts (optional)
1 pomegranate, peeled and seeds separated
4 tablespoons balsamic vinegar
1. Place spinach in a salad bowl.
2. Top with red onion, walnuts, feta and sprouts.
3. Drizzle with balsamic vinegar
You could also add grilled chicken, salmon or steak, substitute walnuts for pine nuts or even add some rocket.
